Rise & shine Acai bowl

What you need:


  • 1 package unsweetened acai puree (SAMBAZON brand is great)
  • 2 frozen bananas
  • 3/4 cup frozen blueberries
  • 1/2 cup coconut cream
  • 1 tsp coconut oil
  • 1 Tbsp chia seed (pre-soaked in water)
  • 1/4 cup buckwheat grouts (+ more for topping)
  • 2-3 Tbsp quick oats
  • 1 Tbsp hemp seeds (+more for topping)
  • almonds
  • walnutsacai_bowl
  • unsweetened cranberries
  • shredded, unsweetened coconut


Blend all ingredients in a high-speed blender (i.e Vitamix), except the nuts, cranberries, and shredded coconut for topping. You might need to help the blender out by breaking up the thick mixture with a designated plastic tamper. Be careful now — don’t go poking around in there with a wooden spoon!! I’ve had wood chips in my smoothies before and it’s not pretty.

Pour into bowl and garnish with shredded, unsweetened coconut, more hemp seeds, almonds, walnuts, cranberries and more buckwheat grouts! I also like to add fresh seasonal fruit. Enjoy this antioxidant-rich dish first thing in the morning, or as a fuelling pre-workout snack! XO
