Chocolate covered Almond balls

What you need:almond_balls

  • 3-4 cups almond meal
  • 2 Tbsp coconut oil (give or take)
  • chocolate for melting

Simply combine almond meal and coconut oil until nice and smooth. (HINT: if you would like to make your own almond meal, check out my almond mylk recipe!) Roll into bite-sized balls and place in freezer on a cooling rack for about 30 minutes. Meanwhile, place your chocolate into a little pot and let simmer until melted. Stir continuously. Once your almond balls are nice and firm, cover them in delicious melted chocolate and place back onto rack. Once you have covered them all, place them back into the freezer for another 30 minutes. Store in fridge for up to one week. Enjoy ~
