Spaghetti Squash & Tomato Sauce

For the sauce:spaghetti_squash

 

  • Handful of cherry tomatoes
  • 1 can of organic tomato paste
  • 2-3 cloves of garlic
  • 1/2 yellow onion (medium-sized)
  • 1 shallot
  • 1/2 cup of vegetable stock
  • olive oil
  • pepper to taste
  • water, as needed
  • OPTIONAL: Brazil nuts for garnishing

 

 

Place your spaghetti squash in the oven (whole) for 25-30 minutes at 400 degrees F. Once it’s done, let it cool off completely. Once cooled, cut in half and scoop out the seeds. Simply scrape the halved squash with a fork and empty the flesh into a bowl. It will come out looking just like real spaghetti! Quite amazing and so much healthier for you!

 

For the preparation of the sauce, pour some olive oil in a pan and fill with chopped garlic, onion, and shallot. Simmer everything on medium high heat and add vegetable stock as needed. Add the fresh tomatoes and tomato paste. I like to add water as well, to make the sauce less thick. Therefore add water as needed to achieve desired consistency. Add pepper to taste, and garnish with chopped Brazil nuts. Enjoy ~
