Great for dinner parties: impress your friends with these easy-to-make, elegant cups of goodness!
- 1 pack organic, gluten free & vegetarian vanilla pudding (GoBio brand)
- 2 cups of almond, soy, hemp OR rice milk! Any milk alternative works
- 2 tbsp. sweetener of your choice (I use maple syrup)
- Fruit medley mix of your choice (hint: freezer section!)
Directions:
Measure 2 cups (500ml) of milk substitute. Mix content of pouch with 1/4 cup (60 ml) of milk substitute, add 2 tbsp. of sweetener of choice, set aside. Bring the remaining 1 3/4 cups (440 ml) of milk substitute to a boil; gradually whisk mixture into the hot milk — we suggest you take the boiling milk off the stove first, then add and whisk mixture, to avoid rapid rising of the pudding! Stir constantly for a minute or two. Pour into high glasses; fill half way and top off with fruit once pudding has cooled in the fridge for an hour or two. Place finished product back in the fridge and serve chilled ~
