Broccoli Soup

What you need:


  • 1 large onion (chopped)
  • 1 large potato (quartered)
  • 1 broccoli head (use the florets only)
  • 2 garlic cloves – minced
  • 1 tsp turmeric 
  • 4 cups vegetable stock
  • 1 tbsp. dried parsley
  • 1 tsp. dried dill
  • olive oil
  • salt & pepper

No-blender option: Heat olive oil in a large sauce pan. Sauté onions and garlic over medium heat until tender. Add turmeric and stir. 2 min

Add potatoes and stock. Incorporate the parsley and the dill; season with salt & pepper to taste. Let simmer for 30 minutes, then add broccoli. Cook for another 10 minutes, then remove from heat. Puree until smooth and creamy!

Option to garnish: Tofutti sour cream & sprouts
