Blueberry Bran Muffins (vegan)

What you need:


  • 1 cup Kellogg’s All Branblueberry_bran_muffins
  • 1 cup brown rice flour
  • 1 cup oat bran
  • 1 cup blueberries
  • 1/4 cup flax seeds
  • 1 cup soda water
  • 1 Tbsp apple cider vinegar
  • 1/2 cup soaked chia seed
  • 1/4 cup brown rice syrup
  • 2 Tbsp honey
  • 1/3 cup grape seed oil
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt


Preheat oven to 400 degrees F. In a bowl, combine all of the following: All Bran; rice flour; oat bran; flax; cinnamon; baking powder; baking soda and salt. In a separate bowl, mix together soda water; apple cider vinegar; pre-soaked chia; grape seed oil; vanilla extract; brown rice syrup and honey. Now pour the wet ingredients into the dry ingredient-bowl, while stirring constantly. Lastly you will add the blueberries! Bake in a regular-sized muffin pan for 20 minutes; or until tooth-pick test comes out clean! Enjoy ~
