Autumn Zucchini Soup

Impress the mother in law with this great tasting, green bowl of health!


    • 5-7 zucchinis
    • 1 large potato
    • 1/2 onion
    • 1 clove of garlic
    • Tofutti sour cream
    • croutons (GF)
    • cumin
    • pepper
    • nutmeg



    Chop onion and garlic and bring to a sim in vegetable oil in a big pot. Add water as needed to prevent the base from burning. Add 1 tsp. cumin and 1 tsp. pepper and 1 generously piled tbsp. Tofutti sour cream. Let sim until the zucchinis are washed, chopped, and ready to go into the pot. Cook the potato for 10 minutes in boiling salt water. Once the potato is done add this and the chopped zucchinis to the base in the pot and let everything cook on medium heat for 15 minutes. Last but not least mash everything with an electrical masher until nice and smooth. Add the nutmeg as desired & garnish with croutons — done!
